Mayor Walker shares Thanksgiving side dish recipe

The Lincoln Parish Journal reached out to Ruston Mayor Ronny Walker for a special dish for Thanksgiving, and he delivered! Make sure to add Mayor Walker’s smoked broccoli, rice and cheese side dish to your Thanksgiving meal.

Kaybaby’s Smoked Broccoli, Rice, and Cheese 
Ingredients:
1 large onion, chopped 
1/2 cup red bell pepper, chopped 
1/2 cup celery, chopped 
1/2 stick of butter 
1 (10 oz.) can cream of mushroom soup 
1 (10 oz.) can of cream of chicken soup 
10 oz. Kaybaby’s smoked pepper Jack cheese 
1 Tablespoon Lea and Perrin 
1/4 teaspoon red pepper, optional 
Salt and pepper to taste 
2 (10 oz.) packages frozen broccoli, cooked and drained 
3 cups Kaybaby’s smoked rice, cooked (1 cup rice to 2 cups water) 

Directions
Sauté onion, red bell pepper, and celery in butter. Add soups, cheese, Lea and Perrin. Cook over low heat until cheese melts. Fold In broccoli and rice and salt and pepper to taste. Put into greased casserole. Sprinkle with paprika or top with more Kaybaby’s smoked cheese. Bake at 350 degrees for 25-30 minutes or until bubbly.
